Crawfish étouffée
Crawfish étouffée is a dish of sweet and meaty crawfish served up in a rich and flavorful gravy that is made from a thick roux. Étouffée literally means “smothered” so the catfish and vegetables are simmered and smothered in the roux. It includes the Cajun holy trinity of onions, bell peppers, and celery, along with lots of garlic, spicy Cajun seasonings, and fresh chopped herbs. We pair it with a side of hot french bread.

Oyster Po’boy
This staple dates back to 1929 during the streetcar strike at Martin Brothers' French Market and Coffee Stand in New Orleans. The po’boy is a classic and ours is no exception. Fried oysters are piled with lettuce and tomato and slathered with tartar sauce, then served between two long pieces of French bread. Be prepared for your eyes to roll in the back of your head once those flavors hit.

Seafood gumbo
As anyone knows, the roux is the key part of any gumbo and because of that we do not cut any corners. Our gumbo roux is made with oil and flour–like the original recipes dating back to the 1700’s–and then cooked down twice for the ideal flavor and consistency. It is then checked for viscosity to make sure it is not too thick and not too watery.
Our seafood gumbo is a blend of gulf shrimp and crabmeat in our rich dark roux and served with hot french bread. You can’t get more classic cajun than that.
